Cucumber Infused Mezcal

Cucumber Infused Mezcal

Ingredients

1 English Cucumber

1 bottle (750ml) Mezcal

What To Do

1.  Using a vegetable peeler, peel the cucumber from end to end, giving you long strips of the peel. Repeat the process one more time peeling the outer area of meat. 

(Save the rest of the cucumber in a bag in the fridge for later use.)

2.  Add cucumber shavings to a mason jar and pour Mezcal on top.

3. Seal jar and leave indoors in an area that gets moderate sun.

Let sit for two days.

4. Cut ends off the peeled cucumbers cut into chunks.

5. Crush/mash the cucumber so you have a chunky, pulpy substance with little liquid.

6. Add cucumber mash to Mezcal infusion.

Replace lid and shake gently to mix.

7. Let sit one more day.

8. Strain, refrigerate & enjoy!

'Smoke in Her Eyes'

Smoked Spicy Cucumber Margarita

Ingredients

1oz/1 bottle Blanco Tequila(1L)

1oz/1 bottle Cucumber Infused Mezcal (see recipe on Spirit page)

1.25oz/2.5 cups Fresh Squeezed Lime Juice

4 cups Water (omit for single serving)

1.5oz/3 cups Chili Syrup (see recipe on Recipe page)

Garnish Options: oranges, cucumber, limes, salt, Chili Salt (see recipe on Recipe page)

What To Do

Combine all ingredients in a shaker(for one serving) or large serving vessel. Shake or stir. 

Punch Style: Slice fruit into thin wheels and add to service vessel. Rim your glassware with salt and leave on a tray for your guests to fill themselves or pre-fill some before guests arrive.

Make a shallow cut along the length of a cucumber and slice into quarter inch thick circles.

Dip in chili salt and rest on edge of glasses as a garnish.

Single Cocktail: Strain beverage into ice filled, salt rimmed glass. Rim glasses by dipping edge into lime juice or running a cut wedge around the rim and rolling in salt. Add a slice of cucumber on top and sprinkle with chili salt across the top of the cocktail.
